Armadillo Egg

Ingredients:

2.5-3 lbs. ground beef (85% lean)
1 lbs. bacon
2 Poblano Peppers (sliced into strips)
1 block Monterey Jack cheese
Homemade or Instant mashed potatoes
TSB Sweet ‘N Smoky
TSB Pig Dust

Directions:

Take ground beef and flatten it out on a lined baking sheet. Place strips of Poblano Peppers and Monterey Jack cheese in the middle of the ground beef (do not overstuff). Start to roll the ground beef towards you and mold it into a football/egg shape. Season the ground beef (top and sides) with TSB Sweet ‘N Smoky. Then take strips of uncooked bacon and wrap around the seasoned ground beef (see pictures). Season the bacon with TSB Pig Dust (top and sides).

Bake in the oven at 350 degrees for 35-45 minutes or until the bacon is crispy on the outside. Remove the Armadillo Egg from the oven and let it rest for about 15 minutes. Use a cutting board and a sharp knife to cut into slices. Serve the sliced Armadillo Egg over mashed potatoes and serve with a side of your favorite vegetables, if desired. Enjoy!
