Shredded Beef Sandwiches
Ingredients:
3.5 - 4 lbs. beef roast (boneless)
1 (32 oz.) box of beef broth
2 jars pepperoncini
1 onion (sliced)
TSB West Coast Blend, Steakhouse Burger, Pig Dust, Beef Rub
French dinner rolls
Swiss, Pepperjack, or your favorite cheese
Directions:
Place the beef roast into a Dutch oven and season it with TSB West Coast Blend, Steakhouse Burger, Pig Dust, and Beef Rub (in that order, adding less of each flavor as you go). Pour about half of the beef broth into the Dutch oven (just around the bottom of roast). Add in the sliced pepperoncini (with the juice), and the sliced onions. Cook in the oven at 350-375 degrees for a total of 4 hours.
At the 2 hour mark remove the roast, and more broth and start trying to break the roast into pieces with a large metal or wooden spoon. Season with more TSB and return the roast to the oven.
At the 3 hour mark remove the roast again, and more broth (if needed) and keep trying to break the roast into pieces with a large metal or wooden spoon (should be falling apart more easily). Season with more TSB and return the roast to the oven.
At the 4 hour mark remove the roast again (it should be finished cooking), and keep breaking the roast into pieces (then strands) with a large metal or wooden spoon (should be falling apart more easily, see picture). Season with more TSB, then give the beef a good stir to incorporate all of the seasonings. Serve the shredded beef on rolls with your favorite cheeses. Add potato chips or fries on the side if desired. Enjoy!
