BBQ Chicken Casserole

BBQ Chicken Casserole: chicken cubed and seasoned with TSB BBQ Rub, penne pasta, crumbled bacon, green onion, green chilis, diced tomatoes, Cheddar and Monterey Jack cheese, and some BBQ sauce.

Ingredients:
TSB BBQ Rub (season chicken and casserole with as much as you like)
2 or 3 Chicken Breasts (cubed and partially cooked in frying pan, finished in casserole)
2 lbs. Penne Pasta
1 package bacon (cook then crumble)
1 bundle of green onions (sliced or snipped)
1 (4 oz.) can of green chilis
1 (10 oz.) can of diced tomatoes
1- 2 large bag(s) of shredded cheese (Cheddar and/or Monterey Jack)
1 – 2 bottles of your favorite BBQ sauce

 

Directions:
Cube and partially cook the chicken breasts, seasoning with TSB BBQ Rub. Cook and crumble bacon. Slice or snip green onions. Cook Penne until al dente. Once pasta is cooked, add all other ingredients to pot, then stir. (Save some bacon, green onions, and cheese for later).

Layer the stirred ingredients into a large casserole dish. Drizzle BBQ sauce, sprinkle TSB BBQ Rub, and a bit of cheese between layers. Top casserole with extra cheese and crumbled bacon.

Cover casserole with aluminum foil and bake at 350 degrees for 35 - 40 minutes. Remove from oven, discard aluminum foil and finish this dish with a bit more cheese, bacon, and some snipped (kitchen shears work great) or sliced green onions.

Place casserole back into oven and cook for about another 10 minutes until the cheese melts and the casserole is a nice golden brown.
